hormones mostly.. see, when a young jellyfish hits a certain age he naturally starts to get an interest in all manner of marine life: barnacles, starfish, etc. and the various infections aquired along this journey cause an fluctuation of jellyfish hormones and leave you with the wiggly tentacles you behold before you.
